Both players start on 501 points. Each turn (a 'visit') you throw three darts and subtract what you scored from your total. The catch: you must reach exactly zero, and your final dart must land in a double (or the bullseye, which counts as double 25). If you go below zero, or hit zero without a double, the visit is a 'bust' and your score resets to where the turn began. Chalkie does all of this subtraction and bust-checking automatically.

A checkout is the combination of darts that finishes a leg — taking you from your current score to exactly zero, ending on a double. For example, from 40 the checkout is double 20; from 170 it's treble 20, treble 20, bullseye — the highest checkout possible.
